Garlic Girl Iceberg Salad

I LOVE iceberg lettuce. I’d much rather have crunchy iceberg in ribbons or small bites than any other green. It’s so refreshing, so crisp, and has the perfect little grooves to fit all of my favorite dressings.
This is one of the first salads my mother-in-law ever made for me, and probably the one that made me fall in love with her. Crunchy iceberg is mixed with a super simple vinaigrette packed with flavor (my garlic girls know). Serve it as a side, with a bunch of your favorite salads, or keep a big bowl to yourself. I won’t tell.
Ingredients
- One head iceberg, chopped as desired (I prefer small bites)

Juice of 2 lemons (about 1/2 cup to 1/3 cup)
- 3 tablespoons olive oil

1 1/2 tablespoons white vinegar or a healthy splash

2 large cloves garlic, grated with a microplane

½ teaspoon salt
Directions
Add the lettuce to a large bowl.
Whisk together the lemon juice, olive oil, vinegar, garlic, and salt. Pour over the lettuce and toss to make sure everything is evenly coated. Serve immediately.
