Viral TikTok Spinach Pasta with Green Goddess Pesto

Have you seen the viral pasta that has taken over TikTok? All it takes is spinach (like, a lot of spinach) and flour blitzed in a food processor to create fresh pasta dough, then you cook it like gnocchi. I added a handful of fresh basil, Parmesan, and garlic to the dough to zhuzh it up a bit and, of course, paired it with Green Goddess dressing. Voilà! Homemade pasta in just a few minutes. (Although fair warning, I did use what seemed like every pot and appliance in my kitchen to get there.) Otherwise, this is a TikTok hack I can get behind ;)

Ingredients
- 2 cups spinach
- 1 cup fresh basil
- 1/2 cup freshly grated Parmesan
- 1 cup flour, plus more for dusting
- 1/4 cup olive oil
- 2 garlic cloves
- 1/2 teaspoon salt
For the dressing
- 1/2 cup fresh basil
- 1/2 cup fresh spinach
- 1 garlic clove
- 1/2 small shallot
- 1 lemon, juiced
- 2 tablespoons cup olive oil
- 2 tablespoons nuts of your choice (I used raw, unsalted cashews and walnuts)
- 2 tablespoons nutritional yeast
- 1/2 teaspoon salt
- 1 tablespoon rice vinegar
- A few chives (optional)
Directions
Pulse all ingredients in a food processor until a ball forms.
- Turn the dough out on a lightly floured surface and knead until it stops sticking, adding a few tablespoons of flour as needed.
- Roll the dough into long strips and cut into 1/2" pieces. Press and roll the dough with your finger.
- To make the sauce, blend all of the ingredients in a blender until smooth.
- Bring a large pot of water to a boil and season with salt.
- Meanwhile, heat two tablespoons of olive oil in a skillet over medium heat. Add the garlic to the pan.
- Add 1/2 cup green goddess dressing to the pan.
- Add the pasta dough to the water and cook until it floats to the top (like gnocchi). Once they’re floating, transfer them from the water to the skillet with a slotted spoon.
- Cook the pasta in the green goddess sauce for a few minutes so it gets evenly coated (add a tablespoon or two of pasta water if it’s too thick). Serve immediately.
