Chia Pudding

I’m famously not a breakfast person. Lately though, I’ve been starting the day with a bowl of chia pudding topped with fruit and peanut butter. Who is she! It leaves me feeling full and satisfied, without leaving my sluggish. Chia is packed with fiber, and when mixed with liquid takes on an irresistible pudding texture. Top with your fave fruits, nut butter, or granola for the perfect breakfast.

Ingredients
14 oz. can coconut milk
2 teaspoons vanilla paste
½ teaspoon cinnamon
Pinch of salt
1 cup plain yogurt
3 tablespoons maple syrup
⅓ cup chia seeds
Directions
- Add the coconut milk, vanilla, cinnamon, salt, yogurt, maple syrup to a large bowl and whisk together. Stir in the chia seeds.
- Place in the refrigerator for 2 - 4 hours, stirring occasionally so the chia seeds don’t cake together at the bottom.
- Divide the mixture into individual glasses and refrigerate, covered, until you’re ready to eat. Top with fruit, nut butter, and/or granola.
