Bite-Size Egg Bites

Of all the bite-size recipes we’ve tested so far, these are the easiest and fastest. They’re perfect if you have little mouths to feed, too. And so customizable! You can throw in whatever veggies you have (just chop them super small) and top with cheese if you want. They bake in about 10 minutes, so only take 15 minutes to make.

The bite-size baking pan is sold out online! Find it at a Target store near you.

Ingredients

  • 4 large eggs
  • 5 oz. full-fat cottage cheese
  • Pinch of salt
  • Pinch of baking soda (makes it fluffy)
  • Avocado oil spray
  • Optional fillings—chives, shredded cheese, finely chopped veggies, spinach, etc.

Directions

  1. Preheat the oven to 350°F.
  2. Add the eggs, cottage cheese, salt, and baking soda to a blender and pulse until smooth.
  3. Spray the baking pan with avocado oil and pour the batter into each well, nearly to the top.
  4. Top with your choice of fillings (or keep it plain). If you’re not using any inclusions, you can add a bit more egg batter to each well.
  5. Bake until the eggs are set, about 10-12 minutes. The egg bites should jiggle slightly, but not be runny in the middle. Let cool, then remove from the silicone pan. Enjoy immediately or store in the fridge in an airtight container and microwave to reheat.
