One-Bowl Yogurt Pancake Bites

Like the bite-size egg bites, these are the perfect stroller snack for little hands. They bake quickly and you can add whatever pancake toppings you love. I threw in a drizzle of maple syrup in half and a few chocolate chips in the other half. Both were delicious, and both sank to the bottom. With the maple syrup half, that just means it would be messier to eat—sticky!!—so I’d recommend dipping in maple syrup instead. I went ahead and made the full recipe for these, since dividing an egg seemed like too much of a project. If you’re cooking for a wide range of ages, that makes it easy to make a few bite-size, and a few regular pancakes on the stove.

Ingredients

  • Avocado oil spray
  • 1 pot yogurt (like La Fermiere)
  • 1 pot whole milk
  • ½ pot olive oil
  • ½ teaspoon salt
  • 1 teaspoon vanilla paste
  • ½ pot granulated sugar
  • 1 large egg
  • 1 teaspoon baking soda
  • 1½ pot all-purpose flour
  • Juice of 1/2 lemon
  • ½ teaspoon baking powder
  • Mini chocolate chips, if desired
  • Maple syrup, for topping

Directions

  1. Preheat the oven to 375F and grease your bite-size baking pan with avocado oil spray (or use the pan liners).
  2. Add the yogurt, whole milk, olive oil, salt, vanilla, sugar, and egg to a large bowl. Whisk until smooth.
  3. Stir in the flour, baking soda, baking powder, and lemon juice.
  4. Use a teaspoon to portion the batter into each well of the baking pan. Each well should be filled to the top.
  5. Add chocolate chips (if you want), and bake for 12-13 minutes, until the pancake bites bounce back slightly when you press them.
  6. Repeat with the remaining batter.
  7. Serve warm with syrup for dipping.
