Bite-Size Peppermint Patties

Ever since I told you guys about the peppermint patties at the Nuts Factory, they’ve been in short supply. I don’t know how often I’ll make them myself, but they did turn out really well. I added a little vanilla to mellow out the peppermint; if you want more of the peppermint flavor to come through feel free to leave it out. Obviously use the best chocolate you can find!

The bite-size baking pan is sold out online! Find it at a Target store near you.

Ingredients

  • ¾ cup sweetened condensed milk
  • 2 teaspoons peppermint extract
  • 1 teaspoon vanilla paste
  • Pinch of salt
  • 4 cups powdered sugar
  • 1 cup chocolate chips

Directions

  1. Add the condensed milk to the bowl of the stand mixer with the peppermint extract, vanilla paste, and a pinch of salt. Mix with the paddle attachment until combined.
  2. Slowly add the powdered sugar one cup at a time, mixing on low to incorporate (otherwise it will fly everywhere). Keep adding powdered sugar until it forms a pastey dough.
  3. Melt the chocolate in the microwave and let cool for a minute or two.
  4. Transfer the melted chocolate to a piping bag, then cut ¼” off the bag. Pipe about ½ teaspoon into the bottom of each well. Swirl the pan so the chocolate evenly coats the bottom of the pan and starts to go up the sides.
  5. Use a teaspoon to portion out small balls of the filling mixture and flatten slightly. Place the filling into each well over the chocolate.
  6. Pipe more chocolate over the peppermint filling, then use a spoon or offset spatula to flatten.
  7. Refrigerate for an hour to let the chocolate harden, then pop the chocolates out of the mold. Store at room temperature or in the fridge.
