The number one rule of bowls is easy: Use what you have!
Lunch bowls are the delicious meal prep you need if you have no time to cook during the week and/or hate eating the same thing twice. We aren’t talking about leftover chicken and rice here—we’re serving nourishing, flavorful bowls packed with a variety of textures and ingredients so every meal feels like a treat. And the best part is, it can be ready in less than 10 minutes if you prep ahead of time.
Here's a primer on how to make the best bowls, an easy lunch option especially when you're working from home. Add a piece of garlicky toasted sourdough or a fresh pita and you have a droolworthy lunch you’ll have to hide from those around you.

How to Pack Your Bowls
Here are the basics for packing a delicious bowl:
Protein: I use tofu, cottage cheese, eggs, or leftovers.
Greens: I love to add microgreens, arugula, and fresh herbs for a pop of flavor.
Veggies: For color, flavor, and texture! It’s great to have a variety of veggies to choose from, like raw, braised, and/or dressed (to name a few).
Variety of Textures: For creaminess, add sliced avocado, an egg, or cheese. For crunch, toasted pumpkin seeds and almonds. And for a salty bite, add chopped olives, capers, or feta.
Easy Salad Recipes for Bowls
These are a few of my favorite salad recipes to make ahead of time and store in the fridge to make bowls even easier. These don't have leafy greens that would wilt, so they'll stay good all week long.
