Peanut Butter Date Bars

I’ve been making these on repeat for so many weeks (yes, I’m eating peanut butter again). Make a big batch, freeze them, then cut and put in a Ziploc in the freezer. You can use any nut butter you love—would be great with GroundUp Snickerdoodle, too. Or you can use crunchy nut butter for a more Snickers-like vibe. So good.
Ingredients

8 medjool dates
- ¼ cup creamy peanut butter
- 2 tablespoons sliced almonds
- ½ cup chocolate chips
Directions
Remove the pits from the dates and pull them in half with your hands. Place them in an even layer over a piece of parchment paper, then cover with another piece of parchment.
- Use a rolling pin (or water bottle, or wine bottle) to roll the dates into a ⅛” layer. Pull the top layer of parchment off the dates. If it sticks, freeze for 10 minutes and try again.
- Spread the peanut butter over half the dates and sprinkle with almonds. Cover with the other half of the dates and freeze for 20 minutes.
- At the end of the 20 minutes, remove the dates from the freezer. Melt the chocolate in a small bowl in 30 second intervals and stir until smooth and fully melted.
- Use a pastry brush to cover the dates completely with chocolate, then let cool completely in the freezer. Cut the bars into 1” pieces and store in an airtight container in the freezer for up to a month.
