Peanut Butter Nut Bars

Directions

1. Remove the pits from the dates and pull them in half with your hands. Place them in an even layer over a piece of parchment paper, then cover with another piece of parchment.

2. Use a rolling pin (or water bottle, or wine bottle) to roll the dates into a ⅛” layer. Pull the top layer of parchment off the dates. If it sticks, freeze for 10 minutes and try again.
3. Spread the peanut butter over half the dates and sprinkle with almonds. Cover with the other half of the dates and freeze for 20 minutes.
4. At the end of the 20 minutes, remove the dates from the freezer. Melt the chocolate in a small bowl in 30 second intervals and stir until smooth and fully melted.
5. Use a pastry brush to cover the dates completely with chocolate, then let cool completely in the freezer. Cut the bars into 1” pieces and store in an airtight container in the freezer for up to a month.
