Baked by Melissa just releasednew gluten-free flavors, and to celebrate I decided to make nutty, delicious, gluten-free cookies! At the end of the day I always crave a bite of something sweet, and these cookies require only a few pantry ingredients and can be mixed together in one bowl. I was blown away by how good they are—if you love little bites of sweetness, make these ASAP.

Ingredients
- 1 egg
- 1/4 cup maple syrup
- 1/2 cup tahini paste
- 1/4 cup date caramel
- 1 cup oat flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3 tablespoons sesame seeds
Directions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix together the egg, maple syrup, tahini, date caramel, oat flour, salt, baking soda, and baking powder until everything is well combined.
- Use a 1” scoop to portion the dough onto the baking sheet. Sprinkle the tops of the dough with sesame seeds.
- Bake for 12 minutes, until lightly golden. Enjoy immediately or store in an airtight container.
