7 Spring Salads to Brighten Your Weekend

Hi, paid subscribers! I had so many recipes to share with you this week and not enough days to send them. To spare your inboxes, here they are, linked!

I couldn’t be happier that the sun is coming out. It means we’re one day closer to the really good tomatoes and we can finally find bright greens at the market (hello, ramps, young garlic, and long scallions!). I’m currently working on growing my own tomatoes—more info below—and hope they start to thrive as the weather gets warmer. To celebrate, here are 7 delicious salads—both simple options and fancier—to let spring produce have its moment in the very welcome sun.

  • I’ve been using this knife more and more, and I really love it. It’s a little cheaper than the Shun and works great (and it’s in stock!). 

  • I used this cast iron pan the other day to make a ribeye and it was PERFECT.

  • My tomato plants (!) have started to sprout thanks to the seed starting kit I got. It came with grow lights and a heating pad—fingers crossed we’ll have homegrown tomatoes soon.

  • I’m planning to order zinnia seeds soon, too, to add some colorful blooms to my rooftop as the weather gets nicer.


Spring Market Salad with Marinated Chicken

This is one of my favorite ways to cook chicken. It absorbs all the delicious flavors from the spices while the lemon juice tenderizes it. 


Braised Beets

Ok, it’s not a salad, but I love having a container of this in my fridge at all times to spoon over toast and cottage cheese.


Asparagus Salad

You can eat this like a dip thanks to the creamy cottage cheese base or serve it as an app. It makes spring produce shine!

Ramp & Corn Salad

If you’re in the northeast right now, ramps are in abundance for a short window. Grab some at the farmer’s market while you can. 


Rainbow Radish Salad

A salad for when you’re really feeling fancy. 


Rainbow Lentil Salad

This salad is perfect for meal prepping and is packed with hearty, nourishing veggies and fresh herbs.

Cukes & Beans

I LOVE spring because it’s when you can start to go to the market and grab handfuls of string beans. If that’s your idea of a good time, this recipe is for you.
