Soups and proteins are regulars on our weekly rotation, especially when cold weather hits. You probably know by now that I don’t love blended soups (baby food)—today’s tomato soup is an exception and should be the first thing you make. It’s great to freeze and you can adjust the texture so easily, whether you want your croutons to sit on top or you want to dunk a grilled cheese in. These are the warm, delicious meals you’ll want to eat all season long.

The Easiest Tomato Soup with Cheesy Pesto Pita Croutons

If you’ve never made soup before, start with this one. (And read this guide.) This is the easiest soup—you roast the tomatoes, onions, and garlic (and anything else you want to add—carrots or peppers would be great), blend them, add liquid to your liking, and serve. I topped it with cheesy pesto pita croutons because I had pesto leftover from the lasagna. Your favorite crispy grilled cheese would be a great pairing, too.

Lazy Lasagna

I put together this whole lasagna in less than 15 minutes—it’s so beautiful, you’d never know. And it’s great that it’s smaller, because I don’t have space in my fridge for an entire leftover lasagna. This is the perfect size for a family dinner (it serves 4-6), and if there are any leftovers they’d make a great lunch.

The mushrooms I used were a pre-made sauce from Eataly. When you make this, either leave them out or sauté mushrooms to add in (that’s how I wrote it in the recipe). If you don’t want to go through the hassle, just leave them out! It’ll be just as good without them.

Everything Salmon with Cream Cheese Spaghetti Squash

Your favorite bagel order, now for dinner. I know this recipe sounds a little insane, but it’s SO GOOD. If salmon’s not for you, you can add everything but the bagel seasoning to your breading for crispy chicken or tofu. It’s the perfect combo of light and indulgent in every bite.
