My Favorite Veggie-Packed Sandwich

Every Tuesday when I get to the office, I immediately start thinking about what I’ll order for lunch. One of my most frequent eats is a veggie sandwich from Lenwich.

If you’re nearby and want to order it yourself (I don’t think they know what the Melissa is *yet* but you could always try 😂), it’s the Veggiewich on seven grain bread with hummus, horseradish, sauerkraut, regular mustard, and sometimes I add a balsamic drizzle. Like all sandwiches, tailor it to what YOU like. That’s how you get what you’ll really love!!

If you want to make it at home, my copycat recipe is below and it is GOOD. I sliced the veggies super thin to get the perfect bite every time. The most satisfying part is slicing it down the middle—once you see the rainbow of perfectly stacked veggies, you won’t be able to resist.

Veggie Hummus Sandwich

  • 2 slices multigrain bread

  • 2 tablespoons hummus

  • 1 tablespoon Dijon mustard

  • 1 tablespoon horseradish

  • 1/2 ripe avocado, sliced

  • 1/4 cup shaved iceberg

  • 2-3 slices ripe beefsteak tomato

  • 1 carrot, shaved with a mandoline

  • 1 radish, shaved with a mandoline

  • 1/4 cup sprouts

  • 1 pickle, shaved with a mandoline

  • 2 tablespoons sauerkraut

  • Salt and pepper, to taste

How to Make a Rainbow Veggie Hummus Sandwich

  1. Place the bread on a piece of parchment paper.

  2. On one slice, spread a thick layer of hummus, and on the other, spread the mustard and horseradish in an even layer.

  3. Place the avocado slices over the hummus.

  4. On the side with the horseradish, layer the iceberg and tomatoes, then season with salt and black pepper. Add the pickles over the avocado, followed by the carrots, radishes, sprouts, and sauerkraut.

  5. Stack the tomato side over the other and fold the parchment paper to keep everything inside. Cut in half to serve.
