My New Fave Way to Make Chicken

I served the chicken in a wrap with slaw, but this method opens up so many opportunities. I poached the chicken in a flavor-packed liquid, transferred it to the mixer to shred, and cooked down the remaining liquid to make a sauce that kept it juicy. Watch me get perfectly shredded chicken in 42 seconds:

These nachos hit every note for watch parties. It’s the perfect combo of snacky and satisfying, with lots of flavorful veggies on top. The new addition that I’m so excited about is the shredded chicken. It’s so easy to make and shreds perfectly in a stand mixer.
Crunchy Ranch Salad with Chicken Wings
Wings and ranch are such a great combo. This salad gives you the satisfying crunch and flavor of a side of ranch and veggies, plus flavor-packed chicken wings that are SO easy to make. (Seriously, they only take 20 minutes.) The salad also pairs so well with my crunchy tofu for vegetarians.
Burger Salad
This is one of those salads that I wish I could order at a restaurant. The light, refreshing base is packed with veg dressed in a simple vinaigrette, creamy avocado, juicy beef, and all of it is drizzled with my version of secret sauce. Add cheese if you want and top with chips for extra crunch!
