Quick & Easy Weeknight Meals

School starts tomorrow, so I’m stressed 😅. I took my kids to Whole Foods today to pick out what they want in their lunches—my oldest just started eating cold cuts (turkey and roast beef) and the idea of packing her a sandwich is thrilling.

I can’t wait until the end of September when we’re in our routines. These first few weeks are daunting! Until then, quick and easy meals are on repeat to get us back into the grind. I also added my favorite treats to make with your kids as a fun evening activity once their homework is done—or to incentivize them to get their homework done.

Magic Meat Sauce

My all-time favorite/quick/easy/delicious/nutritious meal. I can go from having no idea what’s for dinner to serving a delicious, veggie-packed meal to everyone in 30 minutes.

Sheet Pan Chicken Dinner

I have to get used to eating dinner later, because after-school activities are no joke. This is the best meal when you get home from running around all day and want to immediately plop on the couch instead of linger over the stove—just pop it in the oven and away we go.

One-Pot Chicken & Mushrooms

This busy mom loves any meal that can be made in one pot. These chicken and rice meals are always on rotation in our house, especially as the weather gets cooler. The mushrooms give it great flavor, and the chicken is perfectly juicy every time. Bonus! Pretzel Candy Bites

I make these whenever we have a bag of candy lying around our kitchen (so really, Halloween). They’re such a fun way to get your kids’ creative juices flowing! If you don’t have candy, you can use chocolate chips, marshmallows, rainbow sprinkles, or a drizzle of cookie butter to create the perfect sweet and salty bite everyone will love.
