Fried Zucchini Toast with Green Tahini

You know I love agood toast recipe. Toast is the perfect meal, lending itself to crunchy sourdough, crisp veggies, and creamy spreads. I’ve been obsessed with frying eggs in my new stainless steel pans and toast is the perfect vessel for perfect fried eggs with an oozing center. You could, of course, replace the green tahini with smashed avocado, but I love how it adds an extra burst of flavor and fresh herbs. Drizzle more on top at the end, you won’t regret it.

Ingredients
- 1 large zucchini, cut into 1/2" discs
- 3 tablespoons plus 2 teaspoons extra virgin olive oil
- 2½ teaspoons salt, divided
- ½ teaspoon black pepper, divided
- 1 teaspoon garlic powder, divided
- 2 slices sourdough bread
- 2 large eggs
- Chives, to garnish
For the tahini sauce
- Large handful cilantro
- Large handful parsley
- 1/2 cup water
- Juice of 2 lemons
- 1/2 cup tahini
- 2 garlic cloves
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- Lay the sliced vegetables over a tea towel and sprinkle with about 1/2 teaspoon of salt, then flip and repeat. This helps release excess water.
- Heat the olive oil in a stainless steel pan over medium-high heat. Once the oil shimmers, add the slices of zucchini in one layer for 2-3 minutes, until golden.
- Flip the zucchini using a fork or fish spatula and cook until fully golden on the other side.
- Remove from pan and season with salt (less than you usually would since they were already salted), ¼ teaspoon pepper, and ½ teaspoon garlic powder.
- Add another teaspoon of olive oil to the pan and add the bread.
- While you wait for the bread to toast, make the tahini sauce. Add all of the ingredients to a blender and pulse until smooth.
- Flip the bread after 2-3 minutes, once it is golden on one side. Cook for another 2 minutes so both sides are golden and toasted. Remove from the pan and season with salt and ½ teaspoon garlic powder.
- Finally, fry an egg. Add a teaspoon or two of olive oil to the hot pan. Carefully crack the eggs into the pan and season with salt and pepper.
- Cover the pan and let cook for about 2 minutes, until the whites are set on top but slightly translucent (they should be easy to remove from the pan). Transfer the eggs to a plate while you get your toast ready.
- Spread the green tahini over the bread and add a layer of fried zucchini. Top with the fried egg and garnish with chives. Serve immediately.
