Brown Butter Pumpkin Spice Cookies

If you still want to make these cookies but aren’t crazy for pumpkin spice, no worries! You can skip the pumpkin puree and still get the full pumpkin experience. If a cookie could be cozy, this would be the cookie. Soft baked, this cookie is the perfect way to usher in cooler temps.

Ingredients
- 2 sticks unsalted butter
- 1/4 cup pumpkin puree
- 2 eggs
- 1 teaspoon pumpkin spice
- 1 teaspoon of vanilla
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 1/4 cup flour
- 1 teaspoon salt
- 1 cup Chocolate chips or chunks (whatever you prefer!)
- Orange Food Coloring (optional)
Directions
Add two sticks of butter to a medium pot. Melt down and stir constantly over medium heat until small brown specks form at the bottom. Once the specks appear, continue to stir for 2 minutes. Let cool!
- Once browned butter is cooled, place into a mixing bowl and whip brown butter until fluffy, adding in brown sugar and granulated sugar.
- Add in vanilla, and mix (Add food dye here!), pumpkin puree, and egg to the mixing bowl and mix until combined.
- Add in flour and salt slowly until dough forms. Mix in chocolate chunks into the dough.
- Scoop to desired cookie size and place on cookie sheet.
- Bake for 15 min at 350.
