Celery Slaw

Condiment salads are the best salads for summer. Pile it on a hot dog, burger, or BBQ, or serve it as a refreshing side while you grill. The dressing is the perfect blend of sweet and salty, with Dijon mustard to make it creamy and add a pop of flavor.

Ingredients
5 celery stalks
1 bunch bok choy
¼ red onion
¼ cup finely chopped dill
Juice of 1 lemon
2 tablespoons Dijon mustard
1 teaspoon honey
1 tablespoon rice vinegar
½ teaspoon salt
2 tablespoons nutritional yeast
Black pepper
Directions
- Cut the ends off the celery and thinly slice it on the bias. Trim the ends off the bok choy and thinly slice it into pieces about the same size. Add to a bowl.
- Thinly slice the red onion (you can also use a Y peeler or mandoline) and add to the bowl. Add the dill, as well.
- In a small bowl, whisk together the lemon juice, Dijon mustard, honey, rice vinegar, salt, nutritional yeast, and a few turns of black pepper.
- Pour the dressing over the salad and mix to combine. Serve immediately for best texture.
