My favorite part of any granola isn’t the oats, it’s the inclusions. A handful of sweet and salty seeds, nuts, and/or chocolate chips is so much better than getting just a bunch of oats, don’t you think? This recipe is just a blueprint—use it as a guide to create a granola you’ll love. The coconut oil can be swapped for olive oil, honey for maple syrup, tahina for your favorite nut butter. The sky’s the limit!

Ingredients
- 3 cups rolled oats
- 2 cups of your favorite inclusions - I used a combination of walnuts, sliced almonds, pumpkin seeds, desiccated coconut, and sesame seeds
- 1/3 cup melted coconut oil
- 1/3 cup tahina
- 1/2 cup honey
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1 teaspoon salt
Directions
- Line a baking sheet with parchment paper and preheat the oven to 350F.
- Toss together the oats and inclusions in a large bowl.
- Add the coconut oil, tahina, honey, and vanilla to the dry ingredients and stir to combine.
- Stir in the cinnamon and salt, making sure all of the dry ingredients are evenly coated in the wet.
- Spread the granola on the parchment paper. If you prefer a chunkier granola, pat it down into one layer.
- Bake for 22-25 minutes, until the edges are golden brown. It will still be soft at this point! Let the granola cool and break it up as desired into smaller pieces.
