Grated Tomatoes

Like my Garden Salsa and Greek Salsa, this recipe makes the best use of freshly grated summer tomatoes. I blended a quick basil oil (only used a few swirls, so you can use the rest over protein or fresh mozzarella) and it added so much flavor. Slather it on bread or eat it as a dip and enjoy all summer long. 

Grated Tomatoes

Ingredients

  • 2 heirloom tomatoes

  • 1 smaller tomatoes

  • ½ teaspoon salt

  • Juice of ½ lemon

  • ¼ cup packed basil

  • Zest of 1 lemon (about a ¼ teaspoon) 

  • 1 garlic clove

  • Juice of 1 lemon

  • ½ teaspoon salt

  • ¼ cup extra virgin olive oil

Directions

  1. Grate the tomatoes with the wide holes of a box grater. Stir in the salt and lemon juice. 
  2. In a blender, combine the basil, lemon zest, garlic, lemon juice, salt, and olive oil and blend until smooth.

  3. Spoon a few swirls of basil oil over the grated tomatoes and serve with crusty bread.
