Grated Tomatoes

Like my Garden Salsa and Greek Salsa, this recipe makes the best use of freshly grated summer tomatoes. I blended a quick basil oil (only used a few swirls, so you can use the rest over protein or fresh mozzarella) and it added so much flavor. Slather it on bread or eat it as a dip and enjoy all summer long.

Ingredients
2 heirloom tomatoes
1 smaller tomatoes
½ teaspoon salt
Juice of ½ lemon

¼ cup packed basil
Zest of 1 lemon (about a ¼ teaspoon)
1 garlic clove
Juice of 1 lemon
½ teaspoon salt
¼ cup extra virgin olive oil
Directions
- Grate the tomatoes with the wide holes of a box grater. Stir in the salt and lemon juice.
In a blender, combine the basil, lemon zest, garlic, lemon juice, salt, and olive oil and blend until smooth.
Spoon a few swirls of basil oil over the grated tomatoes and serve with crusty bread.
