Green Tahini Slaw

When you use dressing that’s packed with good-for-you ingredients, it makes the whole salad so much better for you. This is a salad where the dressing gives you extra nutrients, so it’s ok that the base is only cabbage. If you have carrots or other veggies in the fridge you can go ahead and add them, but it’s not necessary. Make it, eat it on a chip, or serve in a taco. (And yes, you can skip the cilantro if you must, but try for me.)

Ingredients
½ green cabbage
Juice of 2 lemons
2 garlic cloves
¼ cup olive oil
2 tablespoons rice vinegar
1 tablespoon Dijon mustard
1 tablespoon capers
1 tablespoon caper juice
1 large handful fresh cilantro
1 large handful fresh parsley
¼ cup nutritional yeast
2 tablespoons tahini
½ teaspoon salt
Black pepper
Directions
- Thinly slice the cabbage into ribbons. You can use a mandoline if you prefer.
- Add the lemon juice, garlic, olive oil, rice vinegar, mustard, capers, caper juice, cilantro, parsley, nutritional yeast, tahini, salt, and pepper to a blender. Pulse until smooth.
- Pour the dressing over the cabbage and mix well to evenly coat. Serve as a side or in a taco.
