Israeli Salad

This salad is a close cousin to the Mediterranean Chopped Salad. I added olives for a salty bite and added garlic because I like it. When Adi makes this, he dresses with just lemon juice, salt, and olive oil—if you don’t have any garlic, do that. The output will be just as delicious, and you’ll still want to slurp up every last drop. 

Israeli Salad

Ingredients

  • 4 mini cucumbers

  • 3 tomatoes

  • ½ red onion

  • ¼ cup Castelvetrano olives

  • Juice of 1½ lemons

  • 1 garlic clove, grated

  • ½ teaspoon salt

  • 3 tablespoons olive oil

Directions

  1. Finely chop the cucumbers, tomatoes, onion, and olives, as small as you can make it. 
  2. Add the lemon juice, garlic, salt, olive oil, and a few turns of black pepper. Stir to combine and eat on a chip.
