Maple Tahini Cookies

One of my husband’s favorite desserts is halva, a sweet treat made with tahini and oftentimes, additional flavors like pistachio and chocolate. With a generous helping of tahini, rich brown sugar, flavorful maple syrup, and a garnish of sesame seeds, these cookies remind me of halva, but are light and chewy. To successfully create these cookies, make sure all of the ingredients are at room temperature before you begin. They’ll be ready for you to enjoy in no time!

Ingredients
- 1/2 cup tahini, at room temperature
- 1/3 cup maple syrup
- 1/3 cup brown sugar, packed
- 1/4 cup butter, softened
- 1 teaspoon vanilla paste
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup flour

- Sesame seeds, for garnish
Directions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Whisk together the tahini, maple syrup, and brown sugar in a large bowl. Add the butter and whisk until smooth.
- Stir in the vanilla paste.
- Add the baking soda, salt, and flour and stir until just combined.
- Scoop the dough onto the baking sheet 2 inches apart (these will spread out!).
- Bake for 9-10 minutes, until the cookies are fully cooked through.
- Meanwhile, melt the Hu gems in the microwave.
- Transfer the cookies to a wire rack to cool and drizzle with chocolate using a spoon.
- Garnish with sesame seeds and let cool before diving in.
