This simple lunch can be made in less than five minutes. It’s a light alternative totuna oregg salad, and is delicious on toast or even in an avocado for a quick snack. By lightly mashing the chickpeas, it helps create a creamier base without a lot of added ingredients, so all the extras add a burst of flavor.

Mashed Chickpea Salad

Ingredients

  • 1 can chickpeas
  • Juice of 1/2 lemon
  • 1/2 teaspoon dried oregano
  • 1/2 tablespoon dijon mustard
  • 1 tablespoon mayonnaise
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh black pepper
  • 2 tablespoons chopped chives
  • 1 tablespoon capers, chopped
  • 1 teaspoon caper brine from the jar
  • 1/2 teaspoon garlic powder

  • 1 tablespoon olive oil
  • 3-4 slices sourdough bread
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt

Directions

  1. Drain and rinse the chickpeas. Add them to a large bowl.
  2. Slightly mash the chickpeas with a fork or potato masher.
  3. Add the remaining ingredients and stir until fully combined.
  4. Heat the olive oil in a pan over medium heat and add the bread.
  5. Toast on each side until golden brown, about 3-4 minutes.
  6. Sprinkle with salt and garlic powder. Top with the chickpea salad.
