Melissa’s Meatball Recipe

These meatballs are so delicious and are perfect to keep on hand all week long to feed your fam. I mix these in with pasta sauce that I spike with added veggies (the best way to sneak them in)!

Ingredients
- 1 slice of White Bread
- 1/4 cup of Oat Milk (Add more until bread absorbs! Breads differ so you may need more or less!)
- 1 Egg
- 2 cloves of minced Garlic
- 1/2 teaspoon of Salt
- 1 ½ tablespoons of Paprika
- 1 ½ teaspoons of dried Oregano
- 1/4 teaspoon of Pepper
- 1 ½ tablespoons of Miso Vinaigrette (optional) or 1 tablespoon of Lemon Juice (or red wine vinegar)
- 1 pound of Ground Beef
- 1/2 teaspoon of Baking Soda
Directions
In a large bowl, add 1 slice of white bread. Add in oat milk slowly, until fully absorbed - a little extra wont hurt.
- On top of the bread, crack 1 egg.
- Mince two cloves of garlic and add to the bowl.
- Add in the salt, paprika, oregano, pepper, and miso vinaigrette or acid of your choice because who actually has miso vinaigrette laying around? (Linking the recipe here, it’s not necessary but if you got it, use it!).
- Add the ground beef and baking soda. Combine until all ingredients are incorporated into meat (I like to use my hands for this part).
- Roll into 1-inch balls, and place on parchment paper in an air fryer.
- Bake at 400ºF until golden brown, about 10 - 15 minutes and then drop into your favorite pasta sauce!
- Cover the pot with lid and simmer on low heat for 2 - 4 hours. Enjoy!
