Skip the takeout tonight and make this. This marinated chicken is so juicy and packed with flavor, and it’s perfect for serving over leftover rice and broccoli. I used a grill pan to get nice sear marks on the meat, but you can use a cast iron or stainless steel pan if you prefer. 

Miso Chicken

Ingredients

  • 2 lbs. boneless skinless chicken thighs

  • ¼ cup white miso paste

  • 2 tablespoons toasted sesame oil

  • ½ teaspoon salt

  • 3 garlic cloves, grated

  • 2 tablespoons mirin

  • Juice of 1 lemon

Directions

  1. Cut the chicken thighs into 1” pieces and place in a large bowl.
  2. In a smaller bowl, whisk together the miso paste, sesame oil, salt, garlic, mirin, and lemon juice. 
  3. Pour the marinade over the chicken and use your hands to coat evenly. 
  4. Cover with plastic wrap and let the chicken marinate until it comes to room temperature. 
  5. Heat a grill pan over medium-high heat and spray with avocado oil. 
  6. Add the chicken pieces to the pan and cook for 5-10 minutes on each side, until sear marks form and the chicken is golden.
  7. Serve over rice with broccoli.
