Miso Chicken

Skip the takeout tonight and make this. This marinated chicken is so juicy and packed with flavor, and it’s perfect for serving over leftover rice and broccoli. I used a grill pan to get nice sear marks on the meat, but you can use a cast iron or stainless steel pan if you prefer.

Ingredients
2 lbs. boneless skinless chicken thighs
¼ cup white miso paste
2 tablespoons toasted sesame oil
½ teaspoon salt
3 garlic cloves, grated
2 tablespoons mirin
Juice of 1 lemon
Directions
- Cut the chicken thighs into 1” pieces and place in a large bowl.
- In a smaller bowl, whisk together the miso paste, sesame oil, salt, garlic, mirin, and lemon juice.
- Pour the marinade over the chicken and use your hands to coat evenly.
- Cover with plastic wrap and let the chicken marinate until it comes to room temperature.
- Heat a grill pan over medium-high heat and spray with avocado oil.
- Add the chicken pieces to the pan and cook for 5-10 minutes on each side, until sear marks form and the chicken is golden.
- Serve over rice with broccoli.
