Shaved Brussels Sprouts Salad

I love a good Brussels sprouts salad (especially this one). The crunch provides the perfect base for any salad and needs few other ingredients to create a mouthwatering side. The salad comes together in minutes with only three ingredients in the salad, and by massaging the Feta in, you get a creamy-crunchy bite, every time.
Ingredients
- 2 bags Brussels sprouts
- 1 1/2 cups sliced almonds
- 1 cup Feta
For the dressing
- Juice of 2 lemons
- 1/4 cup avocado oil
- 1 tablespoon white vinegar
- 1 teaspoon salt
- 1 garlic clove, grated with a mandoline
- 1/4 teaspoon pepper
- 1 teaspoon honey
Directions
- Shave the Brussels with a mandoline so you have thin slivers.
- Heat a frying pan over medium heat and add the almonds. Toast for 3-5 minutes until fragrant and golden brown.
- Crumble the Feta into the salad and massage into the Brussels sprouts. Top with almonds.
- Whisk all of the dressing ingredients together in a small bowl and pour over the salad. Mix well to combine.
