Strawberry Chia Pudding

Directions

1. Cut off the tops of the strawberries and add them to a large jar. 
2. Use an immersion blender to puree the strawberries (a regular blender works too if you don't have one), until no chunks of strawberries remain. 
3. In a large bowl, combine the strawberry puree, Greek yogurt, vanilla paste, maple syrup, and chia seeds. Stir well to get everything combined and transfer to an airtight container. 
4. Refrigerate for at least 4 hours, or overnight, until the pudding is fully set. It should be thick and able to be flipped upside down without spilling out. 
5. Enjoy ¼ cup at a time and top with sliced strawberries and/or granola.
