Easy Sheet Pan Dinners

I want to empower you to use what you have to season things (my staples are salt, pep, garlic powder, sweet paprika, and oregano) and give recipe ideas that inspire you. It’s ok if you don’t have a red onion, use green. Chop up red bell pepper instead of tomatoes and throw it on the sheet pan. Or leave it out!! Being able to shop your fridge and use what you have opens up so much creativity in the kitchen. And tell me what you make!! I want to hear all about it.

Sheet Pan Chicken & Gnocchi
I made this last week when Adi and I were working from home and it was SO GOOD. I ate the leftover chicken and veggies in a wrap later that day. And I timed it—it took 11 minutes to prep, then I just threw it in the oven. It really doesn’t get easier than this.
Schnitzleek & Mediterranean Chopped Salad
On Adi’s night to cook, he makes either schnitzel or schishleek (like a kebab). Our youngest loves the schnitzel and the oldest prefers schishleek. One day, I decided to combine the two—crispy, flavorful chicken skewered like a kebab. Make sure to finish them in the broiler so they get nice and crispy.
I paired the recipe with our go-to salad. It doesn’t need to be complicated.
Meatballs & Potatoes
Cooking potatoes under any protein creates the most incredible melt-in-your-mouth meal. This meal can be made even easier if you make the meatballs ahead of time and freeze. The juices from the meatballs soak into the potato slices for the most incredible bite you’ll find yourself standing over the stove to enjoy. Pair with a quick salad or steamed broccoli.
