My formula for easy weeknight dinners that make everyone around the table happy is a protein, a vegetable, and a grain. With this list alone, we already have more than 60 meal combinations! 

Inspired by the growing list in my notes app, this week’s meals are packed with nourishing greens and grains, plus protein to keep you full.

Orzo Pasta Salad with Ribeye

I love this pasta salad—it’s a great way to make the most of all the end-of-summer produce. The tomatoes add sweet acidity to the salad and the dressing! It would be great on its own or served with your favorite protein; in our house, it would most likely be served with ribeye. It’s also super packable for a not-sad office lunch. Feel free to mix up the veggies here and throw in whatever looks great at the market.

Crispy Tofu Salad

This crispy tofu has been one of my staples lately. It’s great in a bowl (with beets) or on top of a salad, especially this one from last week. By seasoning the eggs and breadcrumbs, the tofu soaks up more flavor (plus I can’t get enough of that crunch).

Greens & Eggs

By now you know I love salad for breakfast. This one doubles as an easy dinner, too! Swap the egg for your favorite protein (grab the crispy tofu or ribeye from above or go with chicken schnitzel). Simple, delicious, YUM.
