So today I’m sharing the meals I eat behind-the-scenes—what I eat when you’re not looking. These are my tried-and-true favorite recipes and snacks that feed my whole family. They’re delicious, nutritious, and quick to prepare. Here’s what’s on the menu this week:

5-Minute Salad for One (or Two)
You don’t always have to make a salad that serves a crowd. Cabbage will stay good in your fridge for a long time, so you can easily cut portions of it off to make just enough for a serving or two. The rest of the ingredients are kitchen staples—arugula, cukes, a simple vin, nuts & seeds, and eggs for protein. The perfect WFH lunch.
The Easiest Snack

This is our go-to weeknight dinner. It makes everyone in our family happy and features all the components of a nourishing meal: protein, grains, and greens. It comes together so quickly, which after a busy day is exactly what I need. Save the leftover rice and broccoli for tomorrow’s lunch bowl.

If I teach you anything, I hope it’s how to enjoy leftovers. This lunch was incredible and kept me full all afternoon. (You could just buy the ingredients to make this, but using leftovers is way faster. Who has time to bake a potato in the middle of the day?!)
