Your Veggie-Packed Friendsgiving Menu

Thanksgiving, in my opinion, is an excuse to eat your favorite foods. And if you’re anything like me, you go just for the sides.

Whether you’re invited to a friend’s or doing a potluck at the office, here are my tried-and-true recipes that you can’t go wrong with. Go ahead and print out multiple copies of the recipe, so when people ask for it (they will), you can just hand it to them. And if you’re not interested in cooking anything, bring cupcakes—all your favorite Thanksgiving desserts, bite-size.

Reasons this list is for you:

  • You don’t like turkey (I get it; too dry) and want to fill your plate with sides

  • HR just sent out the Worksgiving sign-up sheet and you have no idea what to bring (forward it to everyone on your team. I am!!)

  • You’re juggling different dietary restrictions and need delicious recipes for everyone

No matter which of these applies to you, consider this your guide for gobble gobble season. Let’s feast.

Starters


Have these ready with a bowl of chips and veggies as people arrive—perfect to buy you time to finish cooking whatever’s in the oven. If you’re going to a friend’s, the dips transport easily and you don’t need to borrow any appliances to heat them up when you arrive. Best guest ever.

Salads


These are my favorite salads for serving a crowd. They’re packed with incredible ingredients and colors to look great on your table. Make the sheet pan or squash salad if you’re hosting (no borrowing the oven), or make the others as a guest. My tip: Keep each component of the salad—base, veggies, crunch, dressing—separate until you’re ready to serve, so everything tastes fresh at the table. These containers are great for the trip over.

Warm Veggie Sides


If you’re hosting, these are for you. (Or I guess if you’re going to a friend’s house and they really really don’t mind you using the oven/stove, but ask first!!) The sesame peas is super fast and easy, great as a last-minute option if you forgot you had plans. And the string beans will have everyone forgetting about crispy canned onions.

Just for fun! Also a great way to repurpose leftover stuffing the next day.
