Bite-Size Pumpkin Doughnut Muffins

This is one of my favorite muffin recipes. The secret ingredient is mace, which makes everything taste like a doughnut. Mace comes from the same plant as nutmeg, but is slightly lighter and sweeter. It pairs perfectly with fall squash for a bite-size muffin to send as a lunchbox treat snack on throughout the week! You can make it without the crumble, but I promise it is infinitely better with it.

The bite-size baking pan is sold out online! Find it at a Target store near you.

Ingredients

  • 1 cup all-purpose flour
  • 3/4 teaspoons baking powder
  • 3/4 teaspoons baking soda
  • 1/2 teaspoon mace
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla paste
  • 3/4 cup pumpkin puree
  • 3 tablespoons maple syrup
  • 1/4 cup mini chocolate chips, plus more to top

Directions

  1. Preheat the oven to 350°F and spray the baking pan with avocado oil spray.
  2. Stir the flour, baking powder, baking soda, mace, cinnamon, and salt together. Set aside.
  3. In a large bowl, whisk together the eggs, sugar, oil, vanilla, pumpkin, and maple syrup in a large bowl.
  4. Stir the dry mix into the wet ingredients until just combined.
  5. Fold in the chocolate chips.
  6. Whisk together all of the crumble ingredients except the canola oil in a small bowl. Add the canola oil one teaspoon at a time until the crumble holds together in small balls. It should feel like wet sand.
  7. Pour the batter into the muffin pan. Top with extra chocolate chips and the crumble.
  8. Bake for 13-15 minutes, until the tops are lightly golden and the muffins bounce back slightly when you press on it.
