I rarely make the same recipe twice, but this is definitely an exception. I wanted to make a gluten-free, dairy-free treat that everyone in the house would enjoy and this is it. Adi’s half has chopped walnuts, mine and the kids’ has chocolate chips. It’s the perfectly moist snacking cake made with mostly good-for-you ingredients when you want a bite of something sweet after dinner.
Ingredients
4 overripe bananas
3 tablespoons maplesyrup
⅓ cup light brown sugar
2 teaspoons vanilla paste
½ teaspoon salt
1 teaspoon ground cinnamon
3 tablespoons tahini
2 largeeggs
½ cup almond flour
3/4 cup oat flour
3 tablespoons avocado oil
¾ teaspoon baking soda
1 ½ teaspoons baking powder
Juice of 1 lemon cheek
¼ cup walnuts, chopped
¼ cup dark chocolate chips
Directions
Preheat the oven to 350F and line a half sheet pan with parchment paper.
Add the bananas, maple syrup, and brown sugar to a blender and pulse until smooth. Add the vanilla, salt, cinnamon, tahini, and eggs, then blend again until it forms a loose batter.
Transfer the mix to a bowl and stir in the almond flour, oat flour, avocado oil, baking soda, baking powder, and lemon juice. You’ll start to see bubbles form; that’s the lemon activating the baking soda.
Pour the batter onto the prepared pan. Top half of it with walnuts and half with chocolate chips (if you prefer one over the other, use all walnuts or all chips). Make it the way you love it.
Bake for 20-25 minutes, until the cake bounces back with you lightly press it. Let cool completely before slicing (if you can wait that long). Store at room temperature for up to 3-5 days.
