Caramelized Onion Dip Recipe

There are so many things to love about caramelized onions. They add such a burst of flavor to anything you pair them with, from French onion soup to burgers to this mouthwatering dip. When you combine sweet caramelized onions to blended cottage cheese, you get a deliciously creamy dip (with added protein!). You can mix and match shallots with yellow onions here; I wanted to use up my growing shallot collection, which is reflected in the recipe. No matter how you make it, I promise you’ll want to keep making it again and again. 

Ingredients for Caramelized Onion Dip

  • 5 yellow onions
  • 7 shallots
  • 3 tablespoons olive oil
  • 1 teaspoon salt, divided
  • 1/4 teaspoon black pepper
  • 10 garlic cloves (or one head)
  • 1 cup vegetable broth
  • 1 - 16 oz. container cottage cheese (I use Good Culture)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon fresh lemon juice
  • A handful of chives

How to Make Caramelized Onion Dip

  1. Slice the onions and shallots. Heat a large pan over medium heat and add the olive oil.
  2. Once the olive oil shimmers, add the onions and shallots. Season with 1/2 teaspoon salt and pepper. Give it a quick stir to combine everything and cook until translucent, stirring occasionally. 
  3. Chop the garlic and add to the pan.
  4. Stirring occasionally, let everything cook for about 30 minutes until the onions have browned. Scrape the brown bits off the bottom of the pan as you stir.
  5. Pour in the vegetable broth and stir again.
  6. Let the vegetable stock reduce fully and continue cooking until the onions are completely caramelized. Remove from heat and let cool.
  7. In the bowl of a food processor, add the cottage cheese, onion powder, and garlic powder.
  8. Pulse until the cottage cheese is totally smooth.
  9. Add the onions to the food processor and season with another 1/2 teaspoon salt. Taste and adjust seasoning as necessary, then garnish with fresh chives. Serve immediately with your favorite chips or crackers.
