When it comes to blondies, I want the middle piece. That piece that’s as gooey as raw cookie dough, with no crispy edges. These chewy blondies are perfect—they’re stuffed with chocolate chips, and if you cut them small enough, there’ll be extra middle pieces to go around.

Ingredients for Chocolate Chip Blondies

  • 1 1/2 sticks unsalted butter, softened

  • 1 cup packed light brown sugar

  • 1/2 cup granulated sugar

  • 1 egg and 1 egg yolk

  • 2 teaspoons vanilla paste

  • 1 1/2 cups all-purpose flour

  • 1/2 teaspoon salt, plus more for sprinkling

  • 1 teaspoon baking powder

  • 3/4 cup dark chocolate chips

How to Make Chocolate Chip Blondies

  1. Preheat the oven to 350°F and line an 8x8 square pan with parchment paper. 

  2. Beat the butter in a stand mixer fitted with the paddle attachment (or using a hand mixer) until creamy. Add the sugars and beat on medium-high until light and fluffy, about 3-5 minutes.

  3. Add the egg, egg yolk, and vanilla and mix again to combine.

  4. With the mixer on low, add the flour, baking powder, and salt, just until combined.

  5. Stir in most of the chocolate chips, reserving a few for the top.

  6. Spread the dough into an even layer in the prepared pan and press the extra chocolate chips on top and add a sprinkle of salt.

  7. Bake for 45-50 minutes, until golden brown. Be careful not to overbake!

  8. Cool the blondies completely at room temperature (I left mine out, uncovered, overnight). Slice into squares or rectangles to serve.
