Chocolate Quinoa Pancakes Recipe

Blender pancakes are one of those mom tricks that I don't know how I lived without. They're so easy to make, don't require an insane amount of pots and pans, and keep my kids happy and nourished. These also use natural sweeteners, so added sugar intake isn't an issue (though to be fair, the only ones they really liked had a lot of chocolate chips on top). Ingredients for Chocolate Quinoa Pancakes 

  • 1/4 cup dry quinoa cooked according to package instructions or 1/2 cup cooked quinoa (pro-tip: this is a great use for leftover quinoa)
  • 1/2 cup oat flour (see how I make it here)
  • 1 1/2 tablespoons cocoa powder
  • 2 eggs
  • 1/2 cup milk
  • 2 tablespoons maple syrup
  • 1/4 cup date caramel
  • 2 tablespoons almond butter
  • 1 teaspoon vanilla paste or extract
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • A handful of chocolate chips
  • 1 tablespoon butter, plus more as needed, for greasing

How to Make Chocolate Quinoa Pancakes

  1. Blend all of the ingredients except chocolate chips together until smooth to make your batter.
  2. Grease a skillet with butter and pour out about a 1/4 cup of batter. 
  3. Add chocolate chips to the batter while it cooks. Flip when the batter starts to bubble. 
  4. Cook for another 30 seconds or so until the pancake is cooked through. 
  5. Enjoy with extra chocolate chips or maple syrup.
