Ingredients: 1/4 cup dry quinoa cooked according to package instructions or 1/2 cup cooked quinoa (pro-tip: this is a great use for leftover quinoa); 1/2 cup oat flour (see how I make it here); 1 1/2 tablespoons cocoa powder; 2 eggs; 1/2 cup milk; 2 tablespoons maple syrup; 1/4 cup date caramel; 2 tablespoons almond butter; 1 teaspoon vanilla paste or extract; 2 teaspoons baking soda; 1/4 teaspoon salt; A handful of chocolate chips; 1 tablespoon butter, plus more as needed, for greasing
